Epson has been working to address challenges in the restaurant industry through a combination of paper and digital solutions. These challenges have led to a case study involving Epson Connect API collaboration. We held this panel discussion because we want to continue to solve a wide range of challenges faced by the restaurant industry and because we want the industry to capitalize on the actual value of paper along with digitalization.

We invited three well-known ramen restaurant owners/managers to participate in a panel discussion to discuss the challenges they face in running their establishments post-pandemic and explore solutions using both paper and digital mediums.

Ryutaro Takaki, President of Menya Always Corp.

Menya Always is a popular tonkotsu (pork bone) ramen restaurant with four outlets in Nagasaki. Their classic tonkotsu ramen has been a favorite among customers since the shop opened. A lot of time and effort is taken to prepare the ultimate soup. This involves simmering over high heat for at least 18 hours while repeatedly stirring and combining three different types of broth. The homemade noodles, which boast a firm texture achieved using less water, come together perfectly with the soup.

Kenta Miyamoto, President of Do-Miso Corp.

Do-Miso is a popular miso ramen shop with its main store in Kyobashi, Tokyo. Its Tokyo-style ramen combines a miso sauce made by blending five types of select miso from all over Japan with a double soup base of animal and seafood flavors. This fusion creates a soup with a rich and fragrant miso aroma. Do-Miso's signature miso ramen features chewy custom-made noodles from domestically sourced wheat and tapioca flour. It is truly a one-of-a-kind dish.

David Ramen is a popular tonkotsu (pork bone) ramen restaurant with four outlets in the Tokyo suburbs.

Pork skulls and bones are vigorously simmered to create a flavorful soup packed with richness and umami, free from any unpleasant odor. The soup is paired with thin noodles with a firm and springy texture, shipped directly from Hakata. The result is a delightful combination. Soy sauce tonkotsu ramen, given a punch of richness with back fat, is David Ramen's most popular dish.
